Celebrating Friday with this colorful chickpea, veggie salad packed with protein, fiber and antioxidants. Who says healthy food has to be boring?
This is simple enough to throw together with ingredients you have on hand. It doesn’t require much dressing since the plethora of produce can stand alone for taste. This would be great to bring to a party or gathering, and looks festive too.

Goat Cheese: Creamy, rich with a hint of tang, goat cheese is a great alternative to cheese made from cow’s milk for those who have a lower tolerance for lactose. It boasts 5 grams of protein for every 1 ounce and is high in trace minerals including copper, phosphorus and calcium.
Onions: Onions are commonly overlooked as a source of nutrition but don’t be fooled. Not only are bursting with flavor but this root vegetable supplies flavonoids which are antioxidants that help fight against high cholesterol, reduce inflammation and reduce the likelihood of unwanted blood clots.
- 1 can chickpeas
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, diced
- 15 grape tomatoes, halved
- ½ cup pitted olives
- ¾ cucumber halved and quartered
- 4 ounces feta crumbled
- Dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper
- Chop and dice all the vegetables and add in a large bowl with feta and olives. Toss and combine evenly.
- For the dressing, whisk together the olive oil, lemon juice and salt and pepper until thoroughly combined. Pour onto salad and toss.
