I am toasting to June and an imminent summer! Where has the time gone? I seriously can’t believe it is June already but I am also thrilled to celebrate summer with come exciting trips and events. I am racking my brain with summer meals and recipes to share in upcoming blog posts on Nutrition By Mia. Blueberry banana has to be one of my favorite summer combos- be it smoothies or toast. Blueberries are the quintessential summer fruit easy to grab on the go for a light snack filled with fiber and free-radical fighting antioxidants. What are you making your toast with this season? Nutrition:
Blueberries: Blueberries are nutrient standouts because of their enormous antioxidant capacity. Antioxidants are essential for combating free radicals that can damage cellular structures as well as DNA. Besides functioning as potent antioxidants in the body, their phytonutrients also act as anti-inflammatory compounds that boast cardiovascular, cognitive and anti-cancer support.
Banana: Nature’s sweetener! Bananas are a great natural addition to baked goods and oatmeal for texture and flavor. Though bananas are starchier than most fruits, they boast vitamins B6 and potassium involved in metabolizing food into energy and replenishing our electrolyte stores after a tough workout.
- 1 piece of sprouted bread
- 1/4 cup blueberries
- 1/2 banana, sliced
- 1 tbsp cashew butter
- Toast your bread.
- Spread cashew butter on one side.
- Garnish with sliced banana and blueberries.
