The holiday weekend is just a few days away! Whether you are hosting or bringing a dish, these six bite-sized ,produce-forward apps are real crowd pleasers. I paired fresh veggies (plus tomatoes = fruit, mushrooms = fungi) and protein stuffings prepped with super versatile and neutral tasting Thrive Algae Oil which has a high smoke point and more good monounsaturated fats than any other cooking oil. Mini bell poppers
Cut mini bell peppers in half lengthwise and remove seeds and membranes. Toss in a large mixing bowl with Thrive Algae Oil and place cut side up in a baking dish. Cook ground beef or turkey in a large skillet over medium-high heat with Thrive Algae Oil and transfer to bell peppers. Bake for 5-10 minutes at 350 F. Top with guacamole and plain Greek yogurt.
Sweet potato coins
Toss sweet potato coins in Thrive Algae Oil and bake in the oven on a lined baking sheet at 350 F for 30 minutes, flipping halfway. While sweet potato is baking, saute bacon bits in Thrive Algae Oil over medium high-heat. Top sweet potato coins with guacamole and bacon bits.
Jalapeno poppers
Cut jalapeno peppers in half lengthwise and remove seeds and membranes. Toss in a large mixing bowl with Thrive Algae Oil and place cut side up in a baking dish. Stuff with mozarella cheese and parmesan and bake for 5-10 minutes at 350 F or until cheese has melted.
Stuffed portobello mushrooms
Remove stems from mini mushrooms and carefully scoop out gills. Toss mushrooms in a large mixing bowl with Thrive Algae Oil and place cut side up in a baking dish. Stuff with mozarella cheese and bake for 5-10 minutes at 350 F or until cheese has melted.
Tuna stuffed celery
Mix one can of tuna with one tablespoon of Thrive Algae Oil, one tablespoon of avocado oil mayonnaise, 1/2 tsp cayenne, salt and pepper to taste. Divide among celery sticks.
Stuffed tomatoes
Carefully scoop out the flesh of medium sized tomatoes and discard. Toss tomatoes a large mixing bowl with Thrive Algae Oil. Place cut side up in a baking dish, stuff with mozzarella cheese and bake for 5-10 minutes at 350 F or until cheese has melted.
