Parsnip Fries

Root veggie turned “french fry”. Parsnip fries are sweeter than their conventional counterparts and a significant source of fiber, folate and vitamin C. Disclaimer: potato fries are actually fairly nutritious as well when baked in the oven using quality oils. Both perfectly dippable and both perfectly delicious.

Ingredients:

1 lb parsnips, peeled and cut into thin strips
3 tbsp EVOO
2 tbsp garlic powder
1/2 tsp salt
1/2 tsp pepper

1. Preheat oven to 450 F.
2. Layer parsnips in a single layer on a lined baking sheet.
3. Toss with EVOO and coat with seasonings
4. Roast 15 minutes, stirring half way through.
