I’ve never met a granola bar that I didn’t like. However, I am aware of the struggle these days to find granola bars that have the ingredients we like and are without all the extra additives and fillers. Sugar is the number one culprit I come across when it comes to store-bought granola bars. Too much refined sugar and not enough of the good stuff.
I set out to create a granola bar that is sweet enough to have us going back for more, and nutritious enough to make it a breakfast, snack or dessert. Bananas are my go-to sweetener of choice when it comes to my baked goods. Honey and maple syrup are also what I turn to because unlike their refined sugar counterpart, these boast trace vitamins and minerals that support our body.
I recommend making a big batch of these at the beginning of the week to have on hand for kids to grab and go as they please and for you to pack in your lunch for a mid-day pick me up. If you make these, don’t forget to share with me on Instagram!

Oats: Fiber is a standout in nutrient-rich oats. Acting to lower cholesterol by blocking absorption and forming a gel to slow digestion and induce satiation are soluble fiber’s two mechanisms of action. When it comes to aiding digestion and regularity, insoluble fiber is a shining star. This key nutrient helps food pass through the digestive tract quickly and seamlessly. Peanuts: These legumes boast biotin, our skin and hair vitamin which plays several essential co-enzymatic roles including metabolizing our food into energy. Additionally they are rich in monounsaturated fats, a healthy fat that our hearts love.
- 3.5 cups rolled oats
- 1 cup peanuts
- 1/3 cup honey
- 2 tbsp coconut oil
- Pinch Pink Himalayan Salt
- 1 tsp cinnamon
- 2 bananas, mashed
- Preheat oven to 350 F.
- Line a 8 x 8 baking pan with parchment paper.
- Add all ingredients to a food processor until throughly combined.
- Pour mixture onto the parchment paper lined baking pan and spread evenly.
- Bake for 15-20 minutes.
