Fall is here which means it’s officially time to turn on the oven! If you have followed me for a while you know I love baking – more than cooking if we are being honest. Honey is one of my go-to sweeteners of choice along with maple syrup. I almost always have both on hand just in case I have the itch to bake, and I know that will be happening a lot in the next coming months.
The first day of fall also means we can officially bring out the pumpkin! Is there anything more festive or tasty than pumpkin treats in the fall? As always, these muffins are made with good-for-you ingredients and are not overly sweet. They’re even healthy enough to work for breakfast, snack and even dessert.
I used Heavenly Organics 100% Organic Raw Honey in these treats. I highly recommend to those looking for a smooth and delicious, multipurpose honey sourced sustainably and ethically. Their honey boasts trace vitamins and is sustainable sourced from naturally-occurring wild beehives which helps protect wild bee colonies. It is estimated that about one-third of the food we consume each day relies to some extent on pollination by bees. #savethebees

Nutrition:
Raw Honey: Raw honey is different from processed honey in a multitude of ways. For one, it still contains most of the vitamins, nutrients and enzymes that are inherently found in its natural state. Research also suggests anti-viral and anti-fungal properties, an ability to ward off seasonal allergies and even boost immunity.
Pumpkin: Beta-carotene is the pigment found in pumpkin and can be attributed to their bright orange hue. Beta-carotene is the precursor to vitamin A but it is also considered an antioxidant which we know helps fight potential oxidative damage to our cells by quenching free radicals. High fiber pumpkin provides an impressive amount of vitamin A– 1 serving is equivalent to more than 200% of your daily intake which aids skin and eye health.
