Is there any better combination than chocolate, peanut butter and banana? I think not. We need a little something sweet to get through a case of the Mondays. Thankfully this recipe is not only made with good-for-you ingredients, it’s also simple to make with ingredients you have on hand.
The waffle iron is back in business and I am always looking for clean, easy recipes to make. Banana is typically my go-to source of natural sweetener and if you know me well, you know that coconut flour is typically my flour of choice. Since coconut flour requires a lot of liquid and/or eggs to work well, this recipe is high in protein and will give you that staying power to get through the morning.

Coconut flour: This high fiber flour adds natural sweetness to any recipe. Its high fiber and protein content are what make this flour unique from its counterparts.
Eggs: Not only do eggs provide high biological value protein, they contain an array of B vitamins including biotin for healthy hair and skin as well as B12 which protects the nervous system and supports brain health. Eggs are also one of the most concentrated sources of choline. Some of choline’s roles include neurotransmitter synthesis (brain communication) and thus memory and cognition.
- 2 eggs
- 1 banana, mashed
- 1/8 tsp baking powder
- 1.5 tbsp coconut flour
- 1 tbsp chocolate chips
- 1/2 banana, sliced
- 1 tbsp peanut butter
- 1 tbsp peanuts
- In a medium bowl, beat eggs together and mash banana into the mixture.
- Stir in baking powder and coconut flour.
- Add batter to a waffle iron to make one large waffle.
- Top waffle with sliced banana, peanuts, chocolate chips and peanut butter/
