Fall is here which means that ingredients like pumpkin and winter squash are officially in my meal rotation! This season tends to be busier than ever, whether you are heading back to school or ramping up for the holiday season at work.
Research suggests that Americans are more pressed for time than ever and getting a nutritious dinner on the table can be a challenge. I am always experimenting with new ways to throw together delicious, nutritious and balanced meals that I can incorporate into my diet and share with my clients.
I am so excited to share this easy fall entrée that I developed in partnership with Unilever. This recipe is made with Knorr® Selects Four Cheese Risotto, a new premium line of rice side dishes that are gluten free and contain no artificial flavors or preservatives.. I use Knorr® Selects on busy weeknights to create quick, nutritious and balanced meals in just three steps: Knorr® Selects + Lean Protein + Fresh Veggies.
Pumpkin adds fall flavor to this dish and extra fiber for staying power while the apple sausage adds a boost of protein. Enjoy this meal on busy weeknights this fall!

- 1 Knorr® Selects Four Cheese Risotto
- 1 cup low-fat milk
- 1.5 cups water
- 1/2 cup pumpkin
- 1/2 cup parsley, chopped
- 1/4 cup pepitas
- 1 cup apple sausage, diced
- 2 tbsp olive oil
- Cook your Knorr® Selects Four Cheese Risotto on the stovetop according to instructions with low-fat milk and water.
- Stir pumpkin, parsley and pepitas into risotto and set aside.
- In a medium skillet over medium heat, sauté apple sausage in one tablespoon of olive oil.
- Add sausage to risotto and stir in to incorporate.
- Serve immediately.
