I had a blast this morning with my friends on ABC’s Lowcountry Live talking Independence Day spread. We covered appetizers, entrees, desserts and of course, our drink for a festive toast.
Enter: Sparkling Watermelon Mimosas with a functional twist.
If you are like me, you are always finding new, innovative ways to use watermelon in the summer months. Watermelon is one of those quintessential summer fruits and one of the most water-rich, which comes in handy in the hot weather.
Last summer I made watermelon pops and this summer it’s all about the beverage. Watermelon and orange are a refreshing match with a kick of ginger for a touch of spice.
These are made with a special ingredient – herbal tea from The Herb Guru.
All their teas have herbs that have been specifically added for their unique perceived benefits. I used the Immunity Blend which has hints of orange and ginger which complements the watermelon seamlessly.

- 2 cups watermelon, juiced
- 1 cup orange juice
- 1/2 cup Herb Guru Brand Immunity
- 1.5 cups Prosecco
- 1 tsp orange zest
- 1/4 tsp ginger
- Add all ingredients to a large pitcher and stir to combine before serving.
