A theme of many of my latest TV segments is shortening time in the kitchen preparing meals so that you can spend more time with family and friends this holiday season. This is something that resonates with me more and more each year – especially now since most of my family lives on the other side of the country!
Today I am sharing a dish that I got to feature on air yesterday – my peanut cauliflower fried rice! This only requires a handful of ingredients and takes no more than 15 minutes to prepare. It just goes to show how having the right ingredients on hand can really save you time in the kitchen without compromising the nutrition 0r flavor of a dish.
This dish is flavored with San-J’s Thai Peanut Sauce. San-J is known for their gluten-free Tamari and asian cooking sauces. Most soy sauces are not gluten-free so it really allows you to cater to your guests who may have this diet limitation.

Cauliflower: Cruciferous veggies take center stage when it comes to supporting the body’s natural detoxification systems and cauliflower is no exception. Their phytonutrients help to activate enzymes in the pathway that help rid unwanted toxins while their array of antioxidants combat the aging and stress of our cells.
- 1 lb cauliflower rice
- 3 tbsp butter or ghee
- 1/2 cup green onion, chopped
- 1/3 cup San-J Thai Peanut Sauce
- 1/4 cup peanuts, crushed
- Salt and pepper to taste
- Heat a medium skillet over medium-heat.
- Add butter or ghee to the pan and allow it to melt.
- Add cauliflower rice to the pan and saute for about 5-7 minutes.
- Add onion and peanuts. Cook for an additional 2-3 minutes.
- Add peanut sauce and stir to combine.
- Remove from heat and add salt and pepper to taste before serving.
