Low carb alternative for mashed potatoes.
Ingredients
- 2 cups peeled parsnips
- 4 cups cauliflower, chopped
- 2 cloves garlic, minced
- 1 tbsp grass-fed butter
- 1 tsp salt
- 1 tsp pepper
Instructions
- Cook cauliflower and parsnips in boiling water until tender
- Transfer cauliflower and parsnips to a large bowl and use a potato mashed to mash it up with the garlic and butter.
- Season with salt and pepper.
