Melt-In-Your-Mouth Lemon Turmeric Chia Loaf: A gluten and dairy-free, simple Lemon Turmeric Chia Loaf that melts in your mouth and is perfect for spring.
Spring is in the air now that we are officially in the month of April!

Working with lemon when it comes to baked goods, is the best because the tartness is a nice complement to sweet. Therefore, this loaf is reminiscent of coffee shop pastries with that melt-in-your-mouth taste. Additionally, it is gluten-free, dairy-free and made with coconut and almond flour. As always, I work with good-for-you ingredients to make this a clean recipe that can be made into breakfast or a snack. See notes below for how to make the loaf into on-the-go muffins!
Lemons like all citrus, boast ample amounts of vitamin C. This nutrient helps with plant-based iron absorption and is needed to produce collagen, a structural component in skin that promotes structure and elasticity.
Most of all, Turmeric is long revered for its anti-inflammatory effects. This is largly attributed to curcumim, the main active component.
Some studies suggest that it may help delay agiing and fight against age-related chronic diseases. Curmumin varies in concentration in turmeric root so not all studies are consistent.
Chia seeds are a good source of omega-3 fats, fiber and antioxidants. 1 ounce provides 11 grams of fiber, 4 grams of protein, 18% of your RDA for calcium.

- 1.5 cups almond meal
- 1/4 cup coconut flour
- 1/4 tsp salt
- 1 tsp baking soda
- 2 tsp chia seeds
- 3 eggs
- 1/4 cup honey
- 1/4 cup coconut oil
- 1/4 cup lemon juice
- 1/2 cup REBBL Turmeric Lemon Tart (1/3 of the bottle)
- Preheat the oven to 350 F.
- Combine almond meal, coconut flour, salt, baking soda and chia seeds in a large mixing bowl.
- In another medium bowl, beat eggs and combine with honey, coconut oil, lemon juice and Turmeric Lemon Tart REBBL.
- Combine wet and dry ingredients throughly and transfer to a greased bread pan.
- Bake for 30-35 minutes.
- Pour remaining 8 ounces of REBBL Turmeric Lemon Tart into a glass and enjoy with a slice of Turmeric Lemon Chia Loaf!
- *Note: You can easily make this into muffins for an on-the-go option. Pour your batter into a greased muffin tin and bake for 15 minutes in an oven set to 375 F.
