By this time you should know that I love crostini. This is my third recipe this summer centered around this simple, crunchy Italian appetizer. Part of the reason why I like it, is because of it’s incredible versatility. I like taking advantage of all the fresh produce the summer season provides and crostini are the perfect vehicle for our favorites. This week I’m leaning towards sweet and simple with elegant mint and a drizzle of honey. Not only are the combinations endless but they are also simple to make and embody elegance on the plate.

Ricotta:Ricotta cheese is a great source of calcium. Besides being critical for bone health, calcium is involved in many basic processes including muscle contraction, hormone secretion, nerve signal transmission and heartbeat regulation. I went with Organic Valley ricotta. which is rich enough for hearty savory dishes like lasagna and sweet enough for simple sweet crostini
Honey: Honey is a source of natural sweetness and contains trace vitamins and minerals that support health. These include several B vitamins and even calcium, copper and iron.
- 1 baguette
- 3/4 cup ricotta cheese
- Fresh mint leaves
- 1/4 cup honey
- Preheat oven to 350 F.
- Cut loaf of bread into 1-inch thick slices.
- Brush both sides of bread slices with olive oil.
- Bake in the oven for 10-15 minutes.
- Remove from oven and top slices of bread with ricotta cheese.
- Top crostini with a mint leaf and a drizzle of honey.
