A great way to achieve this goal is to prep ahead lunch so you have homemade options to enjoy throughout the week such as salad jars. Then add black beans, corn, bell pepper, , cheese and chopped romaine. For my Mediterranean salad jar, I used fresh cravings creamy hummus as the dressing which is made with a short list of high quality ingredients like chickpeas, savory tahini and Chilean extra virgin olive oil. It comes in variety of flavos including everything bagel, honey jalapeno, lemon garlic and spicy red pepper. You can find it in the deli section at Walmart. Then add chickpeas, cucumber, tomato, red onion, feta and arugula. Simply pour it out onto a plate before enjoying.
