Formula for a dreamy, nutrient-packed lunch: whole grain quinoa, lots of veggies & lean protein cooked with a sweet and savory marinade.

My go-to lunch on busy weekdays is always a combination of vegetables, whole grains and protein. Dressing, sauces and marinades are what complete the meal and give it flavor – this one was no exception. 

Use this marinade to bring flavor to mild proteins like chicken and white fish for at least 20 minutes before cooking. 

This marinade is made with the Amaz!n Prune Light Juice Cocktail by Sunsweet.

It’s lower in calories and sugar than their regular prune juice but has the same amount of fiber which is important for digestive health and can aid weight management and blood sugar control. Mild and delicate in taste – it’s a good addition to smoothies and marinades for an added boost of FIBER.

Ingredients
  1. 1/2 cup Amaz!n Prune Light
  2. 1/4 cup soy sauce
  3. 2 tbsp lemon juice
  4. 1/2 tsp garlic powder
  5. 1/4 tsp ginger
Instructions
  1. Whisk ingredients together in a medium bowl.
  2. Marinade protein for at least 20 minutes before cooking.
