Is it summer yet?? I was so excited to receive a watermelon in this week’s farm box delivery (by the way I use Golden Gate Organics and highly recommend if you are local!). Even though it provided a glimpse (and taste!) of summer, I am in no way rushing through spring as this is one of my loveliest seasons here in the Bay Area.
I developed this refreshing drink to showcase the season’s standout… which of course are strawberries. Adding some watermelon and fresh mint make for a refreshing combination that I have happily been recreating throughout the week for a cold sweet treat.
Watermelon provides lycopene, a carotenoid phytonutrient with suggested cardiovascular protection and anticancer benefit. Common among berries, strawberries are no exception when it comes to its antioxidant profile with greatest effects documented when it comes to cardiovascular health.
- 2 cups watermelon, frozen
- 1 cup sliced strawberries, frozen
- fresh mint
- Cut up 2 cups of watermelon and 1 cup of strawberries to freeze for about an hour in a bowl.
- Remove after an hour and blend with fresh mint to a smoothie-like consistency.
- Enjoy!
