Strawberry Oat Muffins, giving spring a whole new meaning. This simple recipe can serve as part of breakfast or as an afternoon snack- packed with complex carbohydrates, a burst of antioxidants, some sunflower butter staying-power and a touch of protein.
Feel free to adjust the sweetness to your liking and switch up the fruit based on the season. I think sliced apples would be perfect in the fall! Enjoy!
- 1 cup oats
- 1/2 cup strawberries, sliced
- 2 tbsp sunbutter
- 1-2 tbsp raw honey
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
- 1 egg white
- Set your oven to 350 F.
- Mix all your ingredient in a medium sized bowl.
- Use your hands to role the oat mixture into equal sized balls and place in a greased muffin tin. Bake for 20 minutes.
- Recipe yields about 4-6 medium sized muffins. Feel free to double the recipe if you plan to make more!
