Breakfast is my favorite meal of the day and there is nothing better than breakfast for dinner. Who agrees?
I’ve partnered with Quaker this fall to recreate one of my favorite hometown recipes using oats inspired by local flavors of my home state of California.
Breakfast insights across the country
Quaker recently surveyed consumers across the U.S. to learn more about how breakfast trends vary between each region of the country. They found that Americans feel nostalgic when it comes to breakfast – whether it’s their original culinary inspiration or the foods that take them back to their childhood.
They also found that savory and over-the-top breakfasts are national favorites, but ingredient preferences vary by region. And while Americans agree that breakfast is the most important meal of the day, it’s not limited to just the morning!
Quaker discovered that when it comes to breakfast food trends, most prefer savory and on-the-go breakfasts. They also enjoy adding protein to breakfast and having breakfast for dinner.
What I found particularly interesting were the trends from where I am from. The survey found that 61% of respondents from the west coast prefer savory breakfasts, with favorites being bacon, eggs and avocado toast, and also like incorporating fresh seasonal ingredients.
Using these trends, I came up with three recipes that can be included at breakfast that not only tie to my west coast roots, they embrace savory and some of America’s favorite breakfast foods like eggs and bacon – with a Quaker oat spin, of course.

- 1 cup (80 g) Quaker oats ground into flour
- 1 tsp low sodium baking powder
- 1/4 tsp salt
- 1/2 cup nonfat milk
- 1 egg
- 1 tbsp olive oil
- 2 eggs
- 2 tbsp salsa
- 2 tbsp hot sauce
- nonstick cookie oil spray
Ingredients

- Preheat a waffle iron to medium.
- Add waffle base ingredients to a large mixing bowl and whisk together to combine.
- Pour batter into the pre-heated greased waffle iron and cook until set. Repeat with remaining batter.
- Repeat with remaining batter.
- Spray a small skillet with nonstick cooking oil spray and place over medium high heat. Crack both eggs separately into the skillet and cook until set. Add one egg to each waffle and top each waffle with salsa, cilantro and hot sauce.

- Add waffle base ingredients to a large mixing bowl and whisk together to combine.
- Pour batter into the pre-heated greased waffle iron and cook until set. Repeat with remaining batter.
- Spray a small skillet with nonstick cooking oil spray and place over medium high heat. Add bacon bits and sauté until cooked.
- Mash avocado in a bowl and divide among waffles. Top each waffle with tomato slices, chives and cooked bacon bits.
