Pumpkin oat muffins in the cranberry, walnut and chocolate chip varieties.
A high-fiber, seasonal snack to enjoy before we bid farewell to pumpkin and transition to all things evergreen and holly! Even though November is coming to an end and we are officially retiring pumpkin spice lattes for peppermint mochas, that won’t stop me from using pumpkin in my recipes. It’s such a healthy and versatile ingredients – you can use it in soups, stews and baked goods adding moisture, fiber and seasonal flavor.
As an oatmeal lover through and through, I was so excited to give Modern Oats a try.
They sent me a variety of flavors to sample. Each comes in a convenient cup that you simply shake, add boiling water to and allow to cook for 3 minutes before enjoying. It’s the ultimate healthy grab-and-go breakfast option. Their ingredients are stellar as well – all real, nutrient-dense ingredients with no additives or preservatives.
Their oats are not only non-GMO, they are also certified gluten-free which is so great for celiac and gluten-sensitive individuals.
I know that oats can be a risky option for those that eat gluten-free, since they are often subject to cross-contamination.
I particularly liked the Apple Walnut and Chocolate Cherry Varieties. Their new Vermont Maple and Nuts and Seeds paired seamlessly with pumpkin in these breakfast muffins.
With Thanksgiving in just a few days and December right around the corner, I know that eating healthy during the holidays can be a challenge. Oats: I am a big advocate of oats as a nutrient-dense breakfast option. Oats are rich in fiber which helps lower cholesterol. It also aids digestion and elimination allowing food to pass through the digestive tract quickly and seamlessly.
Pumpkin: Pumpkins are chockful of beta-carotene, the antioxidant precursor to vitamin A which is important for skin health and immunity.
- 1 Modern Oats Nuts & Seeds Oatmeal
- 1 Modern Oats Vermont Maple Oatmeal
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 cup pumpkin puree
- 1 egg
- 1/4 cup maple syrup
- 3/4 cup almond milk
- 1/4 cup dried cranberries
- 1/4 cup chocolate chips
- 1/4 cup walnuts, chopped
- Preheat oven to 350 F
- In a large bowl, combine oats, spices and baking powder.
- Add pumpkin, egg, maple syrup and milk. Combine thoroughly.
- Grease a muffin pan and divide batter evenly into 10-12 muffins.
- Top muffins with cranberries, chocolate chips and walnuts.
- Bake for 30 minutes.
