Yay for Friday! As promised, I am sharing my chocolate chip chickpea bread today which I teased last week on Instagram.
Since I discovered baking with chickpeas, it has completely changed the way I approach dessert.
I LOVE adding chickpeas to my baked goods like breads, cookies, blondies, you name it. Something about adding the beans themselves versus the flour, adds enough moisture that you don’t even realize that fat is missing from the recipe.
While it can be tricky to work with, I have only experimented with it a handful of times.
Today I am sharing my chocolate chip chickpea bread I made for my family over the holidays. I love having healthy dessert options on hand at all times during the holidays. This one does have fat (peanut butter but you can use any nut butter). Nut butter, unlike regular butter has mono and polyunsaturated fats which are heart healthy versus saturated fat primarily found in the latter.

Chickpeas: Chickpeas are a type of legume meaning it’s high in both protein and fiber which will aid digestion, elimination and satiety. Chickpeas like other legumes, are also a good plant-based source of zinc and iron.
- 1 can chickpeas, rinsed
- 1/2 cup peanut butter
- 1/4 cup coconut sugar
- 1 tsp vanilla
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup chocolate chips
- Preheat oven to 350 F.
- Using a food processor, add all ingredients except chocolate chips and process until smooth.
- Fold chocolate chips into batter.
- Add batter to a lined 8 x 8 baking dish and bake for 25 minutes.
- Allow at least 20 minutes for it to cool before eating!
