CBS Washington, D.C.: Healthy Tailgate

September 15, 2022

Little Leaf Farms, California Grapes, True Lemon, Cosmic Crisp Apples, Mrs. Dash Seasoning

It’s tailgate season! I share healthy tailgate recipes you can make and serve while watching the game.

Autumn Salad

Start with The Little Leaf Farms Baby Crispy Green Leaf –it’s  super crunchy with a unique “curve” shape. This lettuce stays fresh and crispy longer because it’s produced in fully automated greenhouses that are hands-free from seeding to packaging and are delivered to the grocery store within 24 hours of being harvested. No pesticides are used – so no washing required. Add farro, feta, pecans, and  apple slices. I used Cosmic Crisp  which are cross between Enterprise and Honeycrisp, so are juicy, crisp, and naturally slow to brown so you can use them in salads, snacking, baking, cooking. They are grown in Washington state and are available nationwide year-round.

Garlic Shrimp and California Grape Kabobs

For my Garlic Shrimp and California Grape Kabobs, start by seasoning the shrimp. I use the Dash Salt-Free Garlic and Herb seasoning blend which contains more than 20 different spices and adds savory garlic flavor. The Dash salt-free seasoning blends are an easy way to add vibrant flavor to dishes without sodium. Next, add grapes which pair well with many tastes and ingredients including sweet, savory, veggies and lean protein. Plus, they are perfectly portable – no need to peel, cut, core or slice. And they are a heart-healthy food with no fat or cholesterol and are a natural source of beneficial polyphenols which contribute to heart health.

Tailgate tea

Start with 3 packets each of True Lemon Crystallized Lemon and Lime. These have 0 calories and sugar and are made from 3 simple, non-gmo ingredients including real lemon and lime juices and oils. Each packet equals the fresh-squeezed taste of one wedge – so you can use anywhere you would use a lemon or lime wedge. Next add unsweetened tea, 100% orange juice and 100% lemon juice.
