News 4 Jacksonville, River City Live: Tailgate Eats

Today I shared healthy tailgate meals and snacks on News 4 Jacksonville’s River City Live!

First, serve up a party platter!

Start with vegetables and add nutritious dips. I like Fresh Cravings hummus because it’s made with a short list of high-quality ingredients including chickpeas, tahini and Chilean extra virgin olive oil and comes in a range of flavors including everything bagel, honey jalapeño and roasted red pepper – You can find it in the deli section at Walmart. Their salsa is refrigerated instead of jarred – that’s in the produce section at Walmart and organic at Publix. Then your fun ingredients – I like the snacks by Farm Rich –  they make America’s most popular game day snacks and are the Official Frozen Snack Sponsor of Southeastern Conference Football! I recommend adding their Breaded Mozzarella Sticks, Crispy Dill Pickles and Loaded Potato Skins. You can find them in the freezer aisle at Publix, Walmart and more – Just check the product locator on FarmRich.com.

For the main even we have kabobs and burgers!

Beef is an excellent source of high-quality complete protein with 25 grams in each 3-ounce serving along with 10 essential nutrients including iron, zinc, and B vitamins. Ground beef has made it one of America’s all-time favorite go-to cuts because it’s quick, easy and versatile and I used top sirloin Boneless steak for the kabobs which is a lean cut. Next add cheese. I like using Gayo Azul sliced Gouda which is a Dutch cheese with a strong Caribbean Hispanic history and is now a popular family brand in the US that emphasizes authentic flavor and premium quality. You can use the Cotija in tacos and Dutch Edam on a party platter. Find it at Publix and gayoazul.com – just look for the famous blue rooster logo.

Cheers with lower calorie and sugar margaritas!


I started with infused ice cubes made with jalapeno, strawberries, peach and lime and added tequila. I’m top mine off with Skinny Mixes margarita mixes which are made with lime juice and sweetened with agave and a touch of stevia and sugar – no artificial sweeteners, flavors or colors, so they have 75% less sugar and calories than traditional margarita mixes. All their products are low calorie and sugar including the natural syrups launching in target in October and skinny sauces that you can use to top dessert.
