I have been on the ultimate salad kick lately. Blame it on the warm weather or my body just craving the nutrients! My boyfriend always makes fun of me for how long it takes to eat a salad. There is a lot of chewing involved- but it ultimately makes it easier for your body to digest and absorb the nutrients.
Lately I’ve been all about crunchy romaine. Unlike the iceberg lettuce counterpart, romaine is packed full of beta carotene, vitamin K and folate. The beta carotene works in conjunction with vitamin C to help prevent the oxidation of cholesterol and keep our hearts healthy.
This salad is bursting with summer flavors and packed full of produce. The only regret I have is not topping it with crispy tortilla strips for extra crunch. If you do this let me know and tag me on Instagram!

Chicken: Chicken is an affordable source high quality, lean protein which boast vitamins like B6 that helps our bodies with a plethora of functions such as keeping our immunity strong, warding off depression and helping our body convert food into energy.
Tomato: Contrary to popular notion, tomatoes are actually a fruit. They don’t carry the sweetness quite like other fruits and instead carry a slightly bitter and acidic taste. Their deep red color is attributed to the carotenoid pigment, lycopene which offers its heavy antioxidant properties. Tomatoes are linked to bone health, cardiovascular health and have anti-cancer benefits.
- 4 oz chicken breast
- 1 tbsp paprika
- 1 tbsp olive oil
- 2 tbsp fresh cilantro, chopped
- 1/4 tsp salt
- 1/4 cup cherry tomatoes, halved
- 3 cups romaine, chopped
- 2 tbsp fresh cilantro
- 2 tbsp corn
- 2 tbsp tahini
- 2 tbsp lemon juice
- Preheat oven to 400 F.
- Rub chicken breast with olive oil, paprika, cilantro and salt. Place in a covered baking dish and bake for 20-25 minutes. Slice chicken breast and set aside.
- In a medium bowl, make your dressing by mixing lemon and tahini using a whisk. Set aside.
- In a large bowl, toss all ingredients together with the lemon tahini dressing.
- Serve immediately.
