Ingredients
- 1 tbsp Mazola Corn Oil
- 1 garlic clove, minced
- 4 oz. large raw shrimp, peeled, deveined and tails removed
- 1/4 tsp black pepper
- 2 tbsp fresh lemon juice
- 1/4 cup vegetable broth
- 2 cup zucchini veggie noodles
- 2 tbsp fresh parsley, chopped
- 1 tbsp grated parmesan

Instructions
- Heat one tablespoon of Mazola Corn Oil in a large skillet over medium- high heat. Add garlic and sauté until fragrant. Add shrimp and seasonings and sauté for 3 minutes or until shrimp begins to cook.
- Add broth and lemon juice to the skillet and continue to cook for another minute or until shrimp is cooked through.
- Stir in zucchini noodles and continue cooking until noodles are tender and everything is combined. Transfer to a serving bowl and top with parsley and parmesan.
