Blueberry Lemon Breakfast Squares

These blueberry lemon squares taste like dessert for breakfast! What more could you want?

Blueberries are super-versatile, convenient and available year-round thanks the the staggered growing seasons in North and South America.

One handful of blueberries contain only 80 calories and are a good source of filling fiber, important for digestive health and  vitamin C, important for immune health.

Add them to smoothies, oatmeal, yogurt and baked goods for a natural boost of sweetness + nutrients.

  • 2 cups almond flour
  • 1/4 cup coconut oil
  • 1/4 cup coconut sugar
  • 1 cup blueberries
  • 1 lemon?

Instructions
  1. Preheat oven to 350 F.
  2. Whisk together almond flour, coconut oil, coconut sugar in a bowl until combined and press half the mixture into a greased 8 x 8 pan. Bake for 10 minutes.
  3. Heat up blueberries, lemon juice & lemon zest in a small pan over medium heat on the stovetop until liquid consistency.
  4. Pour over the crust and crumble the remaining flour mixture on top. Bake for another 15-18 min. Allow to cool before slicing into bars.

What you’ll need:
3 egg whites
1/4 cup coconut flour
1 tsp truffle dust
Toppings of choice: cheese, marinara, mushrooms, basil etc

Whaat to do:
1️⃣Mix egg whites, coconut flour and truffle dust in a mixing bowl. Add a tablespoon of water as needed for batter just cute come together.
2️⃣Press batter into thin crust and place on a lined baking sheet. Bake for 10 minutes. Top with toppings of choice and bake for another 5 minutes if adding cheese for cheese to melt.

What you’ll need:
2 tbsp maple syrup 
1/2 tsp cinnamon

1/4 cup yogurt

What to do:
1️⃣Preheat oven to 375 F
2️⃣Whisk together maple syrup and cinnamon.
3️⃣Slice off the top of the apples and using a melon baller to scoop out the core. Use a paring knife to make two circular cuts around the core, then place your apple cut side down on a cutting board and slice crosswise.

What you’ll need:
1 cup Quaker old fashioned oats, ground into flour
2 tsp baking powder
1/2 cup plain nonfat Greek yogurt
2 tsp cinnamon
1 tbsp coconut sugar
1 tbsp almond butter, warmed to a liquid consistency

What to do:
1️⃣Preheat oven to 350 F.
2️⃣In a large bowl, combine oat flour, baking powder, yogurt and 1 teaspoon of cinnamon until combined. 
3️⃣Add batter to clean working surface and use a wooden roller to roll the dough into a long rectangle about 1/4-inch thick.
