Blueberry Lemon Breakfast Squares

These blueberry lemon squares taste like dessert for breakfast! What more could you want?

Blueberries are super-versatile, convenient and available year-round thanks the the staggered growing seasons in North and South America.

One handful of blueberries contain only 80 calories and are a good source of filling fiber, important for digestive health and  vitamin C, important for immune health.

Add them to smoothies, oatmeal, yogurt and baked goods for a natural boost of sweetness + nutrients.

Blueberry Lemon Breakfast Squares

  • 2 cups almond flour
  • 1/4 cup coconut oil
  • 1/4 cup coconut sugar
  • 1 cup blueberries
  • 1 lemon?

  • 1/4 cup coconut sugar

Instructions
  1. Preheat oven to 350 F.
  2. Whisk together almond flour, coconut oil, coconut sugar in a bowl until combined and press half the mixture into a greased 8 x 8 pan. Bake for 10 minutes.
  3. Heat up blueberries, lemon juice & lemon zest in a small pan over medium heat on the stovetop until liquid consistency.
  4. Pour over the crust and crumble the remaining flour mixture on top. Bake for another 15-18 min. Allow to cool before slicing into bars.
