You hear it time and time again… breakfast is the most important meal of the day. As a nutritionist and scientist, I don’t argue with this notion.
Research shows that people who take time to eat breakfast in the morning have more steady blood glucose levels throughout the day leading to greater energy and less chance of overeating when 1 o’clock comes around. Of course what you eat is important. Try to pair healthy carbohydrates with protein to keep blood glucose levels even keel. These bananas boast both these coveting nutrients and will have you ready to take on Monday full force.
Nutrition:
Banana: Nature’s sweetener, bananas are a great natural addition to baked good for texture and flavor. Though bananas are starchier than most fruits, they boast vitamins B6 and potassium involved in metabolizing food into energy and replenishing our electrolyte stores after a tough workout.
Honey: Honey is a source of natural sweetness and contains trace vitamins and minerals that support health. These include several B vitamins and even calcium, copper and iron.
- 2.5 tbsp coconut oil
- 1 egg
- 1/2 mashed banana
- 1/4 cup honey
- 1/8 cup almond milk
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1 cup whole wheat flour
- Pinch of salt
- Preheat the oven to 325 F.
- Grease a muffin tin.
- In a medium bowl, beat your egg. Add in mashed banana, coconut oil, honey and milk.
- In another medium bowl combine your dry ingredients- baking soda, salt, cinnamon and flour.
- Combine wet and dry ingredients.
- Divide batter evenly into a muffin tin
- Bake in the oven for 20-25 minutes until golden brown.
