AUTUMN is in the air… can you feel it? These apple-spiced pancakes embody everything that we love about this season- a hearty breakfast, slowly simmered apples infused with warm spices, and dishes that features flavorful seasonal produce.

Apples: Apple polyphenols help balance gut flora which is important because an imbalance (dysbiosis) is linked to many chronic diseases. Their soluble fiber and phytonutrient content has been shown to provide cardiovascular benefit. With over 7000 different varieties, it’s hard to choose a favorite. I love the honey crisp and pink lady varieties but I’ve never met an apple I didn’t like.
Ginger: Ginger is anti-inflammatory and soothing for the intestinal tract. It has even been shown to protect individuals from colon cancer.
- Pancake
- 4 eggs
- 1 cup coconut milk
- 1/2 cup coconut flour
- 1 tsp maple syrup
- 1 tsp baking soda
- 1/2 tsp cinnamon
- Apple topping
- 1 apple, peeled, cored and chopped
- 1/2 tsp ginger
- 1/2 tsp cinnamon
- 1/2 cup water
- 1 tbsp maple syrup
- Beat your eggs in a medium bowl.
- Next, add your coconut milk, coconut flour, maple syrup, cinnamon and baking soda. Set aside.
- In a medium saucepan, add your chopped apples, water, spices and maple syrup.
- Allow it to simmer for about 30 minutes.
- In a medium frying pan, cook your pancake batter on each side, on medium heat.
- Top your pancakes with your spiced apples.
