What’s Christmas without a little bit of indulgence? If you have been following Nutrition By Mia for a year now, you know that one of my favorite holiday traditions is making a big dessert and cookie spread for our annual Christmas party in California after an evening of caroling. This year won’t be any different and I am anxiously gathering recipes to bring into this year’s rotation.
Christmas bark is a popular gift idea this time of year because its something sweet and festive that celebrates the season. Today I am sharing my take on Christmas bark using my coconut oil homemade chocolate bars as a base, and superfood toppings to bring some seasonal flair. These are best to make at home and serve right away since coconut oil becomes liquid around room temperature. Nonetheless, this is a healthy option when looking to satisfy your sweet tooth this holiday season.
Nutrition:
Goji Berries: These tiny berries are truly a superfood in my book. Not only are they particularly rich in free-radical fighting antioxidants, they are considered a complete protein, and rich in vitamin C and A, selenium, iron and fiber (just to name a few!).
Cocoa: Cocoa powder comes from cocoa beans which are then processed into chocolate liquor. Once most of the fat is removed the remaining paste is dried and powdered. The powder provides fiber, protein and antioxidants that fight against free radicals to combat the aging process.
Coconut Oil: Coconut oil is known for its medium chain fatty acids. These unique fats are metabolized quickly like carbohydrates by bypassing the liver during digestion. Preliminary research suggests that it may be linked to brain health and improved immunity.
- 4 tbsp cocoa powder
- 4 tbsp coconut oil (soft-liquid consistency)
- 1 tsp honey
- Goji Berries
- Pumpkin Seeds, crushed
- Coconut flakes (optional)
- Combine cocoa, coconut oil and honey in a small bowl until uniform.
- Pour liquid mixture into a dish lined with parchment paper (I used a loaf pan).
- Sprinkle goji berries, pumpkin seeds and coconut flakes on top.
- Allow it to freeze for 20-30 minutes.
- Serve directly from the freezer, cut into pieces using a sharp knife.
