- 1 can corn, drained
- 1 can dice roma tomatoes, drained
- 1/2 cup red onion, diced
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 cup cilantro, chopped
- Add all ingredients to a large mixing bowl and toss together to combine.
