CBS Las Vegas NOW: Healthy Back to School Lunchbox

It’s that time of the year again. Back to school season is underway! Besides returning to classrooms and textbooks—it also means getting back into the swing of preparing healthy lunchboxes that fuel kids with the energy and nutrients they need for successful days of learning and playing. To build a healthy lunchbox, you want to include a mix of food groups to ensure a diverse range of nutrients. Aim to include the following: protein, grains, fruits, veggies and dairy. Using that formula, you can get creative with your lunchbox offerings.

First up, we have Turkey & Cheese Apple Roll-Ups!

Start with sliced apples. Envy apples are the ultimate apple experience with their Beautifully balanced sweetness, Uplifting fresh aroma and delightfully satisfying crunch. Plus the slices naturally stay white longer which makes them perfect for these rol-ups but also cheeseboards, sandwiches and more. Simply pair slices with cheese and wrap with high quality deli turkey, and pack with cucumber coins for veggies, whole grain crackers for grains and pistachios for additioknak protein and to check all your boxes.

For a sweeter lunch option, we have a Parfait party Pack! Start with yogurt. Next up we have a Pistachio Pinwheel box. Start with your pistachio trailmix. Pistachios not only contain healthy fat and are a good source of fiber, they are one of the few plant-based sources of complete protein. A recent study out of Cornell University found that pistachios are very high in antioxidants. In fact, the level of antioxidants in pistachios rival that of other popular foods commonly thought of as high in antioxidants – including pomegranates, blueberries and red wine. Combine the pistachips with nutritious mix ins lke caca nibs, coconut flakes and unsweetened dried fruit, apple slices and pinwheel sandwiches made with hummus, cheese spinach, bell peppers and whole grain tortillas/

And For a snackier lunch option, try my dippin delights lunch box. Start with nutritious dippers – sliced apples, veggies like cucumber coins and whoel grain pita with pistachio butter and humus for dips that offer plant-based protein.
