ABC Tampa: Healthy Mother’s Day Brunch

Nothings says happy Mother’s Day like a healthy and delicious homemade brunch for mom! I share easy and nutritious sweet and savory recipes she will love starting with single serve frittatas.

Start the brunch spread off with a punch of savory protein and veggies.

The great thing about this recipe is that it can be tailored to your taste and dietary needs using whatever fresh produce, dairy or non-dairy options you have on hand. Sprouts Famers market is my go-to for the freshest, most delicious, in-season produce from local farmers including limited-time varieties that you can’t find anywhere else. They offer a wide selection of local, organic, unique products to fit any lifestyle and keep seasonality top of mind. Studies suggest that in-season produce not only tastes the best but is an its nutritional peak and is often most affordable. Start by cooking your veggies of choice in olive oil in a small skillet until tender over medium high heat. Reduce the heat to low, beat the eggs together with salt ,pepper and flavorful spices like and pour into the pan. Broil the skillet in the oven for 34 minutes or utilt he eggs are puffy, set and slightly golden on the top.
