WPHL-TV Philadelphia: 3 Easy Seafood Dinners for Busy Weeknights

October is National Seafood Month—a great time to add more sustainable seafood to your menu. These three easy, budget-friendly recipes bring variety to busy weeknights while keeping prep simple.

How to Shop for Sustainable Seafood

When purchasing seafood, look for the Marine Stewardship Council (MSC) blue fish label. It identifies wild seafood certified to the MSC’s standard for environmentally sustainable fishing.

You can find the label on seafood products at a range of price points, including fresh, frozen and canned options, as well as some supplements and pet foods.

The MSC is an environmental nonprofit dedicated to sustainable fishing and healthy oceans. Choosing seafood with its blue fish label supports fisheries working to protect fish populations and marine ecosystems for the future.

Pesto Sole Sheet Pan Dinner

Keep cleanup simple with this colorful, one-pan meal featuring sole, baby potatoes and green beans.

Start by tossing halved baby potatoes with olive oil and roasting at 425°F for 20 minutes. Add the sole fillets and green beans to the pan, spread pesto over the fish and lightly toss the beans with olive oil. Return to the oven for about 12 minutes, or until the fish flakes easily and reaches an internal temperature of 145°F.

It’s a balanced dinner with easy prep and even easier cleanup.

Lemon-Garlic Scallop Pasta

Pasta and frozen peas help stretch scallops into a satisfying, budget-friendly meal.

Cook your favorite pasta according to the package directions, adding frozen peas during the final few minutes. Reserve a little pasta water before draining.

Meanwhile, pat the scallops thoroughly dry and sear in olive oil, turning once, until golden and opaque throughout. Add minced garlic toward the end of cooking, letting it soften without burning. Toss with the cooked pasta, peas and fresh lemon juice, adding a splash of reserved pasta water as needed.

Weeknight Cod Fish Tacos

Frozen cod and bagged coleslaw mix make these tacos an easy, affordable addition to your dinner rotation.

Season thawed cod with taco seasoning and bake at 400°F for about 12 minutes, depending on thickness, until the fish flakes easily and reaches an internal temperature of 145°F.

Break the cod into bite-size pieces and serve in warm tortillas with coleslaw. Finish with a squeeze of fresh lime for a simple, flavorful weeknight dinner.
