Veggie Fries and Homemade Beet Hummus

Veggie FRIES dipped into beet hummus… yes, eating your veggies can be fun if you aren’t a salad girl!

Beet hummus has been on my mind since last summer and these fries gave me the perfect excuse to throw together a recipe.

The great thing about hummus is that it goes with nearly all veggies, seamlessly.

I would say that roasted veggies dipped into hummus is a staple in my diet. It’s creamy, satiating and the flavors are endless. Since the base of hummus is legumes, it’s a great source of fiber, protein and B vitamins. 

Beets are a great way to add natural color to a recipe and sweetness (without being overpowering).

They get their gorgeous red color from a plant pigment called betanin which acts as a power antioxidant in the body and may help prevent DNA damage and LDL oxidation (hello, anti-aging).

Veggie Fries sent me some to try of their flavors to try. As a dietitian who works directly with moms looking for feasible way to get their kids to eat more veggies, I fell hard for this product!  They are crispy and crunchy like your traditional french fry but also made with the good stuff – fresh vegetables, legumes and potatoes. Every 10 fries packs two servings of veggies and all their fries are gluten-free as well as free of the top 8 food allergens. Perfect for serving to kids because what kid doesn’t love their french fries! I served up their fries made with potatoes, chickpeas and red pepper. You can find them in the frozen section of the grocery store.
