Plant-based superfood cookies for BREAKFAST, yes please!
Meet the breakfast cookie that dietitian’s dreams are made of. Made with whole grain oats and nutrient-packed “superfoods”.
Superfood is a word we hear all the time. It’s a general word used to describe foods with a HIGH level of nutrients (think antioxidants, vitamins and minerals) relative to the amount of calories it contains.
These are made with Suncore Foods superfoods, a new-to-me brand that I am obsessing over! They carry unique nutrient-rich superfoods including cacao nibs, goji berries, chia seeds and TURMERIC powder. Some nutrient standouts in this recipe:
Goji Berries: One of the most antioxidant-rich foods out there! Goji berries make a great sweet snack or tossed into a trail mix.
Cacao Nibs: The sugar-free, antioxidant-rich alternative to chocolate chips. I love my cacao nibs in yogurt and baked goods!
Chia Seeds: Small in size but packed with FIBER. I love sharing this visual with my clients: 1 tablespoon of chia seeds is equivalent to the amount of fiber that you would get from one APPLE. Toss these little guys into your morning oatmeal or smoothie.

- 2 cups rolled oats
- 2 tbsp Suncore Foods Chia Seeds
- 2/3 cup Suncore Foods Goji Berries
- 1/4 cup Suncore Foods Cacao Nibs
- 1/3 cup pepitas
- 3 tbsp hemp seeds
- 1 tsp cinnamon
- 2 eggs
- 1/4 cup coconut oil
- 1/4 cup coconut sugar
- 1/2 cup banana or apple sauce
- Preheat oven to 325 F.
- Mix dry ingredients in a medium bowl and set aside.
- In another bowl, mix your wet ingredients until uniform.
- Combine dry and wet ingredients and stir until uniform.
- Using a cookie scoop, scoop batter and space out evenly on a lined baking sheet.
- Bake for 15 minutes.
