Easiest, nutrient-packed, weeknight dinner EVER: lemony salmon packets!
Packed with protein, probiotics and omega-3 fats. These are nutrient-rich and full of flavor!
I love adding citrus to my proteins when I am cooking them in the oven or on the grill. It’s an easy and nutritious was to infuse flavor. Because these are made with lemon, you don’t need to add a heavy sauce or too much oil.
I am all about simple, nutritious dinners on weeknights. This dinner takes 10 minutes to assemble another 10 minutes to cook. I am so excited for the weather to get warmer so I can start making these on the grill.
If you are hosting guests on a weeknight, these are a perfect easy entree. Pair it with whole grain quinoa or cauliflower rice for a lightened-up spread. I will definitely be keeping this entree in my dinner rotation this month into summer.

Salmon Packets

Ingredients
- 2 6-ounce salmon filets
- 1/2 lb asparagus spears, ends trimmed off
- 2 tbsp avocado oil
- 1 lemon, juiced
- 1 lemon thinly sliced
- Salt and pepper
- Fresh dill
Instructions
- Preheat oven to 425 F.
- Toss asparagus in lemon juice and avocado oil. Place in two foil packets with a few sprigs of fresh dill.
- Place lemon sliced over asparagus and place salmon over asparagus in each packet.
- Bake for 10-15 minutes until salmon is cooked.
