Going meatless once a week is not only good for your health but the environment as well. The majority of plant-based foods are naturally devoid of saturated fats and high in the good stuff like fiber, vitamins and minerals.
For the base of this recipe, I used Green Giant Fresh’s NEW Vegetable Meal Bowls. The new bowls are low-calorie and made with fresh spiralized or crumbled veggies like cauliflower, zucchini, broccoli and carrots, and one of six regionally-inspired sauce.
The bowls are great on their own, but what I love so much about them is that they are versatile and provide a great canvas for you to customize with your own favorite toppings and proteins.
This meal comes together in less than 20 minutes so it’s perfect for busy weeknights. I used the Green Giant Fresh Buddha Bowl for this recipe, but all of the Green Giant Fresh Vegetable Meal Bowls can be prepared within a few minutes by warming the container in the microwave, mixing in the sauce packet, and adding in the remaining ingredients.
