Typically we associate pancakes with a decadent weekend brunch, but they can absolutely be made better-for-you when made with nutritious fiber-rich flours and add-ins like fresh fruit and veggies.

Protein Pancakes 3 Ways
Ingredients
Blueberry Vanilla Pancakes
- 2 eggs
- 1/2 cup blanched almond flour
- 1/2 cup tapioca flour
- 1 tsp baking powder
- 1/2 cup Atkins Plus Creamy Vanilla Protein & Fiber Shake
- 1/2 cup blueberries
Chocolate Banana Pancakes
- 2 eggs
- 1/2 cup blanched almond flour
- 1/2 cup tapioca flour
- 1 tsp baking powder
- 1/2 cup Atkins Plus Creamy Chocolate Protein & Fiber Shake
- 1 tsp cocoa powder
Green Strawberry Pancakes
- 2 eggs
- 1/2 cup blanched almond flour
- 1/2 cup tapioca flour
- 1 tsp baking powder
- 1 cup spinach
- 1 cup strawberries
Instructions
- Add all ingredients to a food processor except blueberries & strawberries, and blend until smooth. Gently fold in blueberries and strawberries by hand.
- Preheat a medium skillet over medium high heat and pour 3-4 tbsp of batter into the skillet. Cook until the bottom has set, about 2 minutes then flip and cook for another minutes. Repeat with remaining batter.
