NBC Houston: Summer Snacks

Happy summer! I’m on NBC Houston Life with easy summer snacks that you can take to the beach and pool.

First up we have Brownie Beach Bites made with just 3 ingredients – dates, nuts and a mix in. Dates are favorite heathy baking and snack hacks because they are the only superfood that tastes like candy AND provide key nutrients like fiber, potassium and magnesium. Process 2 cups of nuts with your mix in, I use 1 pack of Tidbits Meringue drops – these have less than 2 calories per piece and 80 calories per pouch and come in regular, diabetic and keto-friendly varieties then add in 2 cups of dates. I like these Rancho Meladuco Date Farm Grinders from Walmart because they are considered “imperfect dates” so they are more affordable and they taste just as delicious with that caramel flavor.

Next we have a Greek Yogurt Dessert Dip. The Coconut Caramel Cookie Chobani Flip blends the nutritional benefits of Greek yogurt like protein and calcium, with crunchy mix-ins inspired by nostalgic flavors like the beloved coconut caramel cookie. This pairs perfectly with sliced apples which are a good source of fiber and vitamin C. I like Envy Apples from Trader Joes because they have a balanced sweetness and crunch, and the slices naturally stay white longer which makes them great to serve fresh in snack boxes, sandwiches and salads.

Finally we have Grab-And-Go Balanced Beach Boxes. To build a satisfying snack, pair fiber with protein. Fiber sources include veggies, whole grains, whole fresh fruit and even these That’s It Fruit Bars which is are made with 1 simple, recognizable ingredient – 100% real fruit that’s it – so you are getting a plant-based super snack made with pure ingredients in this portable, convenient format. For protein we have Greek yogurt, cheese, nuts, edamame and jerky.
