Apple Pie Energy Bites
Our first snack is apple pie energy bites packed with protein and fiber which is what I call a snack with staying power. I recommend using in-season Autumn Glory apples, which are a skillfully crossed, fuji and golden delicious apple. They have a very sweet, firm flesh with hints of cinnamon and caramel. It’s grown by Superfresh Growers, which is fifth generation and family owned. You can find them at HEB. For our nut butter, you can choose from almond, peanut and chocolate hazelnut by Naturally More. I love these nut butters because they also have added flaxseeds, which have those omega-3 fats and probiotics, which support digestion and immunity. You can find them on Amazon. Savory Granola Trail Mix
Next up we have a savory granola trail mix that also combines filling fiber and plant protein. For our oil, I recommend using a blend of extra virgin coconut and avocado oil. It’s called Cocavo, you can find at Walmart. If you love the sweet flavor of coconut oil – this is a better for you alternative because it’s lower in saturated fat and higher in those good plant-based fats. Give that a toss and place on your baking sheet. next toss with your protein source which are crunchy chickpeas by Saffron Road – we have sea salt, Bombay spice and falafel flavors. These are a great crunchy high protein crouton or potato chip swap. You can find these at Whole Foods, HEB, Randall’s and Sprouts.
