Whisps, Fitjoy pretzels, Lantana Hummus, Pure Farmland

So excited to be back on Great Day Houston today! Now back to school may look a little different this year but no matter the circumstance, we all need healthy and easy meals and snacks. Today I am sharing options that take 10 minutes or less starting with snack boxes that are kid and adult-friendly.

SNACK BOX 1: ELEVATED CHEESE AND CRACKERS

First we have elevated cheese and crackers. Start with your produce – add grapes, cucumber coins and cherry tomatoes. Then add your cheese crisps. I used Whisps which are made with 100% cheddar cheese and a blend of savory spices with 10g of protein and 3 grams of net carbs per serving. Plus they are an excellent source of calcium so you can feel good about giving them to your little ones.

SNACK BOX 2: RAINBOW STUFFED VEGGIES

Our next snack box is rainbow stuffed veggies. First add sliced mini bell peppers and celery. Next assemble your hummus sampler – I used Lantana Hummus which is an Austin-based alternative bean hummus company whose motto is “Keeping Hummus Weird” and come in assorted fun and festive flavors from mild to spicy. I used the edamame, black bean, yellow lentil and roasted garlic.

SNACK BOX 3: SWEET AND SALTY

Our last snack box can help satisfy your sweet and salty cravings. Start with your fruit – add strawberries and banana. Then add your pretzels. I used grain-free FitJoy pretzels and peanut butter pretzel nuggets, which are made with organic cassava flour, and are great for those that are following a gluten-free or anti-inflammatory diet.

SAVORY MEAL IN A JAR: PLANT-PROTEIN PACKED SUMMER SALAD

Next up we have a meals in a jar. These are great if you’re on the go but also if you are at home and short on time because you can make them in advance. First we made my plant protein summer pasta salad in a jar. First transfer your cooked pasta and chopped fresh produce to a large mixing bowl– we have red onion, cherry tomatoes, cucumber and broccoli. For the protein source, I simply swapped out beef meatballs for the Pure Farmland Homestyle Plant-Based Meatballs. Many of us are looking to add more variety to our meals at home and the Pure Farmland plant-based products make it easy from the breakfast sausage to protein starters and burger patties. These products are also non-gmo, made with complete soy protein and are gluten and dairy free. Next, whisk together your dressing ingredients.A dd balsamic vinegar, basil, salt and pepper, and oil. Pour over your salad, give it a toss and transfer to your mason jars.
