Sweet and Savory Pancake and Waffle Bar
First we have a sweet and savory pancake and waffle bar! First assemble your sweet toppings. I shared in-season fresh fruit, yogurt, granola, nuts and Crofter’s Organic Fruit Spread which have 33% less sugar than traditional jams and jellies and fruit is the first ingredient.
Raw manuka honey is another nutritious sweet topping and what I call a sweetener with benefits because it adds sweetness along with vitamins, minerals and antioxidants unlike refined sugar. The Comvita manuka honey is sourced from New Zealand where the manuka flower is native. It’s also UMF certified which means that it contains the three unique chemical markers that make it real Manuka honey.
For our savory waffle toppings, I shared eggs and salsa made with fresh, vine-ripened tomatoes and crisp handpicked vegetables.
Instead of chicken and waffles, you can serve with baked breaded veggies instead. We have breaded whole white button mushrooms, real cream cheese stuffed jalapeno peppers. That way you are getting fiber, vitamins and minerals.
Customizable Egg Muffins
Finally, round out the spread with customizable egg muffins. Make these with a dozen eggs, 1/2 cup of diced veggies and 1/4 cup of cooked chopped sausage baked for 20 minutes at 350 F. I use the plant-based savory Green Chile Chedd’r Sausages by Sweet Earth – they handcraft award-winning plant-based foods so it’s made with vegan cheddar and is free from cholesterol and nitrates found in many traditional meat sausages. It also adds 13 g of protein.
