Appetizer: Lightened-Up Potato Salad
First up we have a lightened-up potato salad made with riced cauliflower, which has 85% fewer calories than most prepared rice. I used the Riced Veggies Cauliflower from Green Giant’s Veggie Swap-Ins® line because it’s made with 100% cauliflower, no sauces or seasonings. Get the recipe here!
Appetizer: Watermelon Arugula Salad
Here we have a Watermelon Arugula Salad topped with Cacique Queso Fresco, which is one of my favorite quality Mexican cheeses, from an authentic Mexican food brand. Crumble it over dishes or slice and serve on a cheeseboard. It has a milky, fresh and salty flavor, with a crumbly creamy texture.
Entree: Sweet Potato Bun Sliders and Lettuce Hotdog
Next we have lettuce bun hot dogs and sweet potato bun pulled pork sliders. These ingredients are from Save A Lot, which is a neighborhood discount grocery store that has high quality products like the award winning Marcum spices and seasonings and the Kurtz sauces and condiments which are a great way to flavor dishes for very little calories
Dessert: Patriotic Dessert Kabobs
Another option is patriotic dessert kabobs. I used red, white and blue fruits and the soft baked GOODTO GO bars, which have a cake-like texture. They’re vegan, gluten-free, made with real, organic ingredients and are low in sugar and net carbs.
Drink: Sparkling Patriotic Spritzers
Finally we have sparkling patriotic spritzers made with 100% pomegranate juice and super fresh Zonin Prosecco made with 100% glera grapes that are soft pressed and bottled every 45 days for freshness. It retails for just under $15 bottle. Then add red, white, and blue fruit.
