Today on FOX Chicago, I share healthy back to school meals and snacks.
Starting with after school snacks
I have an elevated take on traditional ants on a log – grapes-in-a-canoe! Start with celery and add your nut or seed butter. Top with grapes and add whole grain pretzel sticks. Grapes on their on their own are perfect for back to school because they are healthy and portable. Grapes are in season May through January. Plus, one study at UCLA suggested that consuming grapes daily may support a healthy brain.
Breakfast:
For breakfast we have whole grain oats which are a good source of energizing carbohydrates and filling fiber. Then let your kiddos choose their nutritious toppings. Set out fresh fruit, nuts, seeds, nut butters, low sugar jellies and more.
Lunch box:
Finally, make lunch time more exciting by checking your protein, produce and whole grain boxes in creative ways like these whole grain waffle sandwiches. I use a waffle mix made with ancient grains and chickpeas so they are naturally high in protein and fiber. Then add your fillings like avocado and eggs or PB and jelly.
