FOX Charlotte: Healthy Recipes To Make during Quarantine

Today on FOX Charlotte, I shared healthy meal, snack and dessert ideas you can make with ingredients at home.

Breakfast:

My first tip is to build your breakfast around whatever fruit you have on hand. For me, that’s blueberries which are available fresh and frozen year round, they are a good source of Vitamin C, which supports immune health, and fiber, that helps us feel full. Current research is looking at blueberries and their potential ties to heart, brain and gut health.

Meals:

For lunch and dinner, build your meals around protein and produce. Canned beans are a convenient source of protein and so are frozen meatballs, I keep a bag in my freezer. Pop those in the microwave for 2 minutes and they’re ready to serve over pasta.

Snacks:

Next choose snacks with staying power that contain protein and fiber like roasted chickpeas or edamame. When I have a sweet tooth, I like the Dark Chocolate covered chickpeas or peppermint patties.

Dessert

Finally, choose desserts with benefits like my 100-calorie black bean brownie bites. Black beans add plant protein and fiber while lowering the amount of fat required in the recipe.
