Sweet treats have been on my mind for the past week, preparing recipes and tips to share with viewers in my healthy holiday sweets segment on ABC!
Today I am sharing dark chocolate chip walnut blondies that I made last week while experimenting. When I am baking for a lot of people, I am particular about the ingredients I use especially those with food allergies. There are a few brands that are my go-to’ including Food For Life and PASCHA. These baking chips are allergy-friendly, free from 8 major food allergens including soy and dairy so you can accommodate friends and family with diet limitations.
As we know, desserts can pack a lot of sugar, which provides energy but very little to no nutrition.
Most people who follow my blog know I love to sweeten my desserts with dates. They are naturally sweet but unlike sugar, which is just pure carbohydrates, dates provide nutrients like iron and potassium. They are also rich in fiber which helps slows digestion so we don’t experience those ups and downs in energy that pure sugar can cause. I recommend making it into a paste and then adding it to your recipes.

Dark Chocolate: The darker the chocolate the better! Dark chocolate is definitely one of those healthier indulgences – it is a powerful source of free-radical antioxidants, nutrients like iron and magnesium. Dark chocolate has been attributed to lower cholesterol, blood pressure and even improving brain function.
- 2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 cup coconut oil
- 3/4 cup coconut sugar
- 1 egg
- 1/4 tbsp almond milk
- 1/3 cup chocolate chips
- Topping: 1/4 cup chocolate chips, 1/4 cup walnut pieces
- Preheat oven to 350 F.
- Line a 8 x 8 baking sheet with parchment paper
- In a large bowl, combine flour, baking powder and coconut sugar.
- In another medium bowl combine coconut oil, egg, almond milk, and date paste.
- Add flour mixture to the liquid mixture and fold in chocolate chips until you form a uniform batter.
- Transfer batter to the baking dish and smooth using a spatula. Top with chocolate chips and walnuts.
- Bake for 25 minutes.
