Cheers the the first month of summer!
Warmer weather always has me craving even more fresh produce like strawberries, cucumbers and celery.
Produce is primarily made up of water (about 80-90 %) so it’s another way to keep hydrated during those warmer months.
Another delicious and refreshing way to stay hydrated are aqua frescas!
This celery lime aqua fresca is super refreshing, not too sweet and even has added electrolytes from coconut water which is important to replenish when you are outside all day.

The star of this beverage is CELERY.
Yes, celery! Besides adding it to salad and dipping into nut butter, they also make a super refreshing addition to beverages. I used Dandy’s fresh-cut celery which is truly the sweetest, crispiest celery with the fewest strings. They even have three PhD’s on staff who work with Mother Nature to make it tase this good.

- 3 Dandy celery stalks, chopped
- 2 cucumbers, peeled and chopped
- 1 lime, juiced
- 3 cups coconut water
- For garnish: extra Dandy celery stalks
- Add all ingredients to a blender and blend until no chunks remain.
- Strain liquid through a fine mesh strainer and discard the solids.
- Serve chilled with celery for garnish
