CBS, New Orleans: 10-Minute Healthy Breakfasts

As a registered dietitian, I do believe that breakfast is the most important meal of the day. Today on CBS, New Orleans, I shared some delicious 10-minute options for national breakfast month!

Help meet your recommended 3+ servings of vegetables per day at breakfast

Many of us struggle to meet our recommended three servings of vegetables per day so BREAKFAST is a great time to get a head start. The organic spiralized and riced veggies by Cece’s Veggie Co. make it really easy!  You can enjoy them raw or cooked. I shared the butternut squash noodles in breakfast fritters. You can also add cauliflower rice in smoothies! Their products are available at Whole Foods Market.

Help meet your recommended 2+ servings of fruit per day at breakfast

Breakfast is also a great time to help meet your recommended two servings of fruit per day so we made pomegranate overnight oats for two. First, you want to add add one cup of rolled oats then add one 8-ounce bottle of POM Wonderful which is 100% pomegranate juice. The entire 8-ounce bottle has as much potassium as a medium banana and more antioxidants than a glass of red wine! Then add a half-cup of yogurt. Let that refrigerate overnight, give it a stir in the morning and enjoy!

Opt for whole grains over refined


Next we made breakfast sandwiches using my 3-step method. First you want to swap out refined white bread for one made with whole grains. I use gluten-free English muffins by Canyon Bakehouse because they have a similar taste and texture to white bread (great if you are making that transition!) but they’re made with ingredients you would find in your own kitchen like brown rice and sunflower seeds. Then you want to add a fruit or veggie – like raspberry jam or guacamole. Followed by protein – like an egg and almond butter.

Power up with protein to ward off hunger until lunchtime

Finally, when you are opting for a grab and go breakfast option, you want to focus on pairing protein with fiber. Almond butter is a convenient protein option! I shared Naturally More almond butter which has added probiotics, which are beneficial bacteria that support digestion and your immune system. Pair that with your fiber –  fruit, veggies or a whole grains!
