CBS Las Vegas NOW: Smarter Snacking for National Snack Month

It’s National Snack Month! I am sharing smarter snacking tips today on Today on CBS Las Vegas NOW to satisfy every craving

Crunchy

Instead of potato chips, try ready-to-eat Dandy Radishes and celery sticks paired with salsa and plant-based dips. The plant-based dips by Fresh Cravings are vegan, gluten-free made with nuts, seeds and flavorful spices. Because they are preservative-free, you can find them chilled in the produce section at Smith’s and Walmart.

My favorite crunchy snack to make in the afternoon is chickpea salad stuffed celery sticks. Start with Dandy Celery – Dandy has been researching and growing celery for almost 100 years to make it naturally sweeter and crispier with fewer strings. For our salad, we are adding mashed chickpeas, red onion, salt and pepper and instead of mayonnaise, I use the Fresh Cravings Creamy Garlic Almond Dip. These dips can easily be incorporated into recipes that call for dairy or cream-based ingredients.


Our final crunchy snack is organic baked chickpea puffs by HIPPEAS – you can find them at Target. They’re gluten-free, vegan and provide 4 grams of plant protein and 3 grams of fiber per serving and come in Vegan White Cheddar, Nacho Vibes & Bohemian Barbecue.

Sweet

For our sweet snack we have blueberries which are available fresh and frozen year-round. They are a good source of vitamin C, which supports immune health and dietary fiber, which helps us feel full and supports heart health. Just one handful of blueberries per day may improve heart health in individuals with metabolic syndrome according to new research published in the American Journal of Clinical Nutrition.

Build snacks with staying power

My final smart snacking tip is to build satisfying snacks by pairing protein with fiber. What you’ll need:
✨1 whole grain sprouted tortilla
🥬PRODUCE - romaine
🧀FAT - cheese or almond cheese
🥩PROTEIN - black beans or cooked ground beef
🍅FLAVOR - @freshcravingssalsa crisp authentic tasting salsa found chilled in the produce section at Walmart.

What to do:
1️⃣Cut a line in the center of a tortilla to the bottom. 
2️⃣Add your protein, produce, flavor and fat to the four quadrants. 
3️⃣Starting with the bottom left corn, fold the tortilla up, then over to the right and then down.
4️⃣Heat the tortilla in a pregreased skillet over medium heat to melt the cheese (optional).

What you’ll need:
3 egg whites
1/4 cup coconut flour
1 tsp truffle dust
Toppings of choice: cheese, marinara, mushrooms, basil etc

Whaat to do:
1️⃣Mix egg whites, coconut flour and truffle dust in a mixing bowl. Add a tablespoon of water as needed for batter just cute come together.
2️⃣Press batter into thin crust and place on a lined baking sheet. Bake for 10 minutes. Top with toppings of choice and bake for another 5 minutes if adding cheese for cheese to melt.

What you’ll need:
2 tbsp maple syrup 
1/2 tsp cinnamon
1 @autumngloryapple 
1/4 cup yogurt

What to do:
1️⃣Preheat oven to 375 F
2️⃣Whisk together maple syrup and cinnamon.
3️⃣Slice off the top of the apples and using a melon baller to scoop out the core. Use a paring knife to make two circular cuts around the core, then place your apple cut side down on a cutting board and slice crosswise.
4️⃣Brush with maple syrup mixture, place in a baking dish and bake for 30 minutes.
