To make this recipe from my book, simply combine 3 cups of rolled oats, 1/3 cup of honey, ¼ cup of extra virgin olive oil and with 1 cup nuts and ¼ cup of seeds which you can conveniently grab from the bulk foods section at Sprouts in the exact quantities needed. Toss to combine and bake in a singl layer on a prepaered baking sheet for 20 minutes, tossing half way. Serve with fresh berries over low fat plain Greek yogurt. This granola adds a touch of sweetness, filling fiber, good fats and plant protein.

The great thing about this recipe is that it can be customized with your choice of produce and customized to your dietary needs. Place 1 pound of frozen shredded hash browns in a baking dish and combine with 2 cups of chopped veggies such as spinach, bell pepper and onion. In a large bowl, whisk together 6 eggs with 1/3 cup of regular or plant-based shredded cheese 1/3 cup of almond milk, salt and pepper and pour over the vegetables. Bake for 30 minutes at 400 F.
