For breakfast: make-ahead breakfast sandwiches
This is the ultimate grab and go option! Studies suggest that people who cook at home eat fewer calories, less sugar and less fat thanks to greater control over ingredients, portions and preparation methods. These breakfast sandwiches are easy to make, packed with protein and perfect for busy mornings!
How to make them: whisk 12 eggs with chopped spinach, bake on a lined pan for 15 minutes at 350 F, cut into squares and layer onto toasted English muffins with cooked chicken patties and cheese, wrap, freeze and reheat in the morning!
For lunch: a light and high protein option – tuna salad cups!
These are made with mashed avocado instead of mayo which adds creaminess, healthy fats and fiber. Tuna is a good protein-packed pantry staple that is a source of omega-3 fats that support brain and heart health.
How to make them: combine 1 can of tuna with 1/4 cup of celery and red onion and 1 mashed avocado. Serve out of lettuce cups for a low carb option or on toasted whole grain bread for added fiber and staying power.
For dinner: it doesn’t get easier than my baked orzo sausage dish!
Cooking everything together create rich layered flavor and keeps hands-on time to a minimum.
How to make them: place garlic and herb soft cheese, 1 box of orzo, 1 jar of sun-dried tomatoes and 3.5 cups of water in a baking dish. Cover and cook for 400 F. Stir in cooked crumbled sausage and chopped spinach and serve.
For dessert, a sweet treat that’s actually good for you!
My 5-ingredient banana oatmeal chocolate chip cookies! These are naturally sweetened with bananas, and are a good source of fiber and plant protein, making them the perfect healthier dessert.
How to make them: combine 2 mashed bananas with 1/2 cup nut butter, 1 cup quick oats, 1/2 cup of rolled oats. Scoop onto a baking sheet, decorate with chocolate chips and bake for 10 min at 350 F.
